Easy Tiramisu

I bought a tiramisu cake in Amici for my son when he celebrated his 7th month birthday. Look-wise it was pleasing but taste-wise, it had too much alcohol for my taste.

Due to that incident, i decided to try to make a tiramisu cake. I searched the internet and combined several easy recipes and tweaked some steps until I eventually finished my so-called tiramisu cake.

We have just tasted my finished product and I’m happy to report that it turned out quite alright despite my lack of baking skill. 🙂

For the cream filling:
6 oz of cream cheese
1/2 cup of white sugar
1/4 cup of heavy cream
1 small lime (kalamansi)
1/8 tsp vanilla

For the chocolate custard:
1/8 cup white sugar
1 1/2 tbsp cornstarch
1/4 cup milk
1/4 cup heavy cream
1/8 cup hershey’s syrup
1/8 cup dark chocolate
1 egg
1/8 cup butter
1/4 tsp vanilla

for the cake
15 pcs lady fingers
Milk chocolate drink

For the cream filling:
1. In a bowl, mix the cream cheese with 1/4 cup of sugar until smooth.
2. In a separate bowl, mix the cream with 1/4 cup of sugar until stiff.
3. Combine the cream cheese mix, cream mix, vanilla and lime and mix until smooth.

For the chocolate custard:
1. In a pan over medium heat, combine the sugar, cornstarch, milk, heavy cream and chocolate. Stir mixture until thick and bubbly
2. In a separate bowl, beat the egg with a small mixture of chocolate.
3. Transfer the egg mixture to the chocolate mixture and mix for 90 seconds.
4. Turn off the heat the combine the butter and vanilla with the mixture and stir until fully combined.
5. Place in the ref to cool

The cake:
1. Using a 5 by 3 inch tupperware, dip the ladyfingers to the milk choco drink and line it up in the tupperware.
2. Once the bottom is already filled up by the ladyfingers, spread the cream.
3. Repeat steps 1 and 2 until you used up all the lady fingers and cream.
4. Spread the chocolate custard as the top filling.
5. Place in the chiller and consume the next day 🙂

That’s it!

You may opt not to make a chocolate custard if you don’t want to. You may also opt to use coffee instead of milk choco drink for the ladyfinger dips.
